Here are some recipes which although they look wickedly good are actually extremely healthy.
Guilt Free Raw Chocolate Fudge
This delicious fudge is guilt free! Smooth and silky, you don’t need much to satisfy. With these health-giving ingredients, you can enjoy your chocolate fix safe in the knowledge it’s totally good for you.
Ingredients
½ cup coconut oil, melted
½ cup cacao powder
½ cup almond butter
¼ cup organic 100% maple syrup
½ teaspoon vanilla extract
¼ teaspoon of salt
Method
Melt the coconut oil gently over a very low heat. Add to a bowl with all the other ingredients and mix well.
Pour into a suitable dish lined with baking paper. Refrigerate for 20 minutes, slice and enjoy!
Store in the freezer or fridge.
Fruity Chews
Ingredients
1 Cup muesli
1 Cup coconut
1 Cup dates or 1/2 dates & 1/2 apricots
1/2 Cup sultanas or mixed fruit
4oz Butter or a substitute
1 Egg
1/2 Cup raw sugar
1 Cup wholemeal S.R flour
1/2 Cup currants
1/2 Cup chopped nuts
1 Tablespoon sesame seeds
2 Tablespoons honey
Method
Mix all the dry ingredients.
Melt butter & honey, beat egg & add all the dry ingredients mixing well.
Using a teaspoon shape mixture into balls about the size of a walnut.
Place on a greased tray & flatten slightly.
Bake for 10-15 minutes at 350F Makes approx 4 Dozen.
Healthy Chocolate Slice
Ingredients
1 cup Almonds (soaked overnight – discard water)
2 cups Dates (soaked for a couple of hours then drained – 1 cup for topping)
1 cup Filtered water
½ cup Pure organic cacao powder
2 cups Coconut meat or dessicated coconut
Method
Add the almonds, 1 cup of dates, water and carob.
Blend in a food processor until smooth.
Mix in the coconut, then press the mix into a biscuit tray, to about 1 inch (2.5cm) thickness.
Leave covered in the fridge for 2-3 hours to firm up.
For the topping
Process the second cup of dates in the blender with a little water until smooth like a cake icing and spread over the set mix. Sprinkle with some coconut or other nuts of your choice. Place the rest in the fridge, then cut into small squares and serve.
Makes 20 squares.
Decadent Chocolate Mousse
Ingredients
2-3 very ripe avocados
½ cup raw cacao
¼ cup agave plus a little more if needed or a splash of maple syrup (not raw)
¨÷ cup coconut oil, melted
1 teaspoon vanilla extract
¼ -½ cup water add slowly to get consistency of mousse
1 vanilla pod scraped - optional
Pinch of salt or chilli
Method
Blend all in a food processor
Allow to sit in fridge for an hour before serving
Optional - Layer berries in individual glasses top with chocolate mousse, yummy!!
Raw Chocolate Mousse Torte
Ingredients
4-6 ripe avocados
1 cup raw cacao
1/2 cup agave or maple syrup or a few drops of liquid stevia to sweeten
1 teaspoon of natural vanilla extract
1/2 to 3/4 water, added slowly to get the consistency of mousse
1/2 cup of coconut oil, melted
1 dessertspoon of Bestow oil
1 vanilla pod scraped
1/2 cup fresh or frozen blueberries
Base
2 cups of pecans
1/4 cup of cacao powder
2 tablespoons of coconut oil
1/4 cup maple syrup
1 teaspoon of pure vanilla essence
1/2 teaspoon of Himalayan sea salt
Base Method
Oil a 7-10 inch spring form pan & line with a circle of baking paper. Blend the pecans until crumbly (keep them a bit chunky) do this in the food processer. Add in the rest of the base ingredients & blend until just mixed. Press mixture firmly & evenly into your pan with slightly wet fingers. Pop into the freezer until set while making your mousse.
Mousse Method
Blend all the ingredients in a food processer except the Blueberries. Scatter the Blueberries over the base & then spread the mouse mixture over the top & allow to sit in the fridge for an hour before serving.
Carrot Cake Balls
Ingredients
1 cup almond meal
1/4 cup walnuts
1/4 cup pecans
6 dat
1/4 cup raisins1/4 cup coconut
1 teaspoon Bestow oil
2 large grated carrots
1 teaspoon cinnamon
Pinch of nutmeg
Method
Simply blend all the ingredients together in a food processor & form into balls about the size of a walnut. Roll in coconut & serve. Store in the fridge or they can be frozen. *Organic produce is preferred but not essential.
